Beso's Lamb Kofta

Ingredients:

  • 500 g good quality lamb minc
  • 1 tsp cumin
  • Generous combination of sea salt and black pepper
  • 1 tbsp dried coriander
  • 3 cloves of garlic, crushed
  • 10 fresh mint leaves, finely chopped
  • ½ medium carrot, grated
  • ½ medium courgette, grated

Method:

  • Place all the lamb into a food processor and blend until minced.

  • Put the lamb into a bowl with the rest of the ingredients and mix everything together.

  • Divide in to 8 balls and then roll into sausage shapes kebabs and thread them on to dampened wooden skewers.

  • Put the lamb koftas in the fridge for 30 minutes,to chill and firm up together.

  • Heat 1 tbsp of olive oil in a large frying pan and add the lamb koftas. Cook for 10 minutes,making all sides are cooked
