Beso's Lamb Kofta
Ingredients:
- 500 g good quality lamb minc
- 1 tsp cumin
- Generous combination of sea salt and black pepper
- 1 tbsp dried coriander
- 3 cloves of garlic, crushed
- 10 fresh mint leaves, finely chopped
- ½ medium carrot, grated
- ½ medium courgette, grated
Method:
Place all the lamb into a food processor and blend until minced.
Put the lamb into a bowl with the rest of the ingredients and mix everything together.
Divide in to 8 balls and then roll into sausage shapes kebabs and thread them on to dampened wooden skewers.
Put the lamb koftas in the fridge for 30 minutes,to chill and firm up together.
Heat 1 tbsp of olive oil in a large frying pan and add the lamb koftas. Cook for 10 minutes,making all sides are cooked
