Dave's Turkey Mince Chilli
Dave is one of our MANWELL footballers and this is one of his go-to recipies something healthy and filling.
I make this in 1 big batch then split it into 3 or 4 portions and freeze it or keep it in the fridge.
Ingredients:
- 500g turkey mince
- 1 sachet con carne mix, I use bramwells from Aldi, a Schwartz mix , asda own etc
- 1 or 2 chillies red or green or both!
- 1 medium onion chopped
- 1 tin chopped tomatoes
- 50g white mushrooms (optional, but they are very low in calories)
- 150ml cold water
Choose 2 from the following
- Tin red kidney beans drained and rinsed
- Tin white kidney beans drained and rinsed
- Tin butter beans drained and rinsed
- Tin mixed beans drained and rinsed
- Tin of sweet corn drained and rinsed
Method:
- Use fry light or a small amount of olive oil
- Brown the turkey mince and drain off any excess fluid
- Add chopped onion and chillies and stir over a medium heat until onion has softened a bit.
- Add the packet mix in water, chopped tomatoes and stir over a medium heat for a few minutes.
- Add your choice of 2 tinned beans and stir in.
- Cover and cook over a low heat for about 10 minutes add a bit of water if its too dry. Stir now and again.
- Leave to cool and divide in to equal portions.
I have this for lunch and it works out at 500 calories if I do 3 portions and really fills me up,if you want it to go further add more mushrooms and veg to bulk it out.
