Dave's Turkey Mince Chilli

Dave is one of our MANWELL footballers and this is one of his go-to recipies something healthy and filling.

I make this in 1 big batch then split it into 3 or 4 portions and freeze it or keep it in the fridge.

Ingredients:

  • 500g turkey mince 
  • 1 sachet con carne mix, I use bramwells from Aldi, a Schwartz mix , asda own etc
  • 1 or 2 chillies red or green or both!
  • 1 medium onion chopped
  • 1 tin chopped tomatoes
  • 50g white mushrooms (optional, but they are very low in calories)
  • 150ml cold water

Choose 2 from the following 

  • Tin red kidney beans drained and rinsed 
  • Tin white kidney beans drained and rinsed 
  • Tin butter beans drained and rinsed 
  • Tin mixed beans drained and rinsed 
  • Tin of sweet corn drained and rinsed 

Method: 

  • Use fry light or a small amount of olive oil
  • Brown the turkey mince and drain off any excess fluid
  • Add chopped onion and chillies and stir over a medium heat until onion has softened a bit.
  • Add the packet mix in water, chopped tomatoes and stir over a medium heat for a few minutes.
  • Add your choice of 2 tinned beans and stir in.
  • Cover and cook over a low heat for about 10 minutes add a bit of water if its too dry. Stir now and again.
  • Leave to cool and divide in to equal portions.

I have this for lunch and it works out at 500 calories if I do 3 portions and really fills me up,if you want it to go further add more mushrooms and veg to bulk it out.
